June 2021, I decided to see what the hype around eating a vegan, plant-based diet was all about.

I now choose not to eat meat or dairy. And I feel amazing!


Hello, I am Monica White. I am an educator, writer, and mother. And in 2021, I’ve added another moniker—Plant-Based Enthusiast.

I was so excited about the results of changing my diet that I wanted to share with everyone. So, I created Plant-Based Friends, a private FB community, where I encourage members, my PBFs, to make healthier eating choices using lessons I’ve learned about how to transition to a vegan, plant-based diet.

The number one lesson I want everyone to know is that whole foods plant-based eating is so good—it’s good for you; it‘s good to you, and it’s super fun!

I’ve had so much fun eating a plant-based diet that I decided to build seedsnutsrootsandleaves.com so more people could find inspiration, motivation, and the support needed to make a change in their lives and those around them simply by changing what’s on their plates.

Dr. Monica White leads Plant-Based Friends, a private Facebook group. She also hosts Dining with Plant-Based Friends so attendees can experience fine dining at vegan, plant-based establishments.

Monica is a Curriculum & Teaching doctoral graduate of Teachers College Columbia University. She also earned a Plant-Based Nutrition Certificate, (March, 2022), at T. Colin Campbell Center for Nutrition Studies and eCornell. She enjoys taking long walks, innovating plant-based meals, and writing. Monica is a mother of two and resides in Brooklyn, New York.
