(V)egg Breakfast Muffin

 

This morning I was running late for work and didn’t have time for breakfast. I was good on lunch because I packed enough yesterday to last me a couple of days. I opened the fridge to see what I could grab for a fast breakfast to bring to work: a brown banana, a couple slices of oyster mushrooms wrapped in foil, and a Just Egg foldable from the freezer. I looked at this like this is truly an eat to live moment because I don’t know what this is. Just fuel. Nothing special.

I get to work to warm up my fuel and my friend says I have some avocado in there if you want it; it’s not much. I said, “Sure! Girl, this is just the right amount!”

She said, “Oh did you see I brought in some English muffins?”

Me: “No I didn’t. Yes I’ll have one. Thanks.”

We looked at my plate and I now had a vegan egg McMuffin .

I know it’s not my Sunday “From Thy Bounty” post but I left home with two slices of mushroom and a frozen just egg patty and ended up with a vegan Egg McMuffin from the generosity of my office mates. This will forever be my Sermon on The Mount breakfast sandwich . Thanks Natalie Cosby.

Oh, and the banana was good on the inside too even though the exterior was not. So glad I grabbed that too
