It’s Harvest Salad Time

Following last weekend, I had to get back to basics and remind myself that I eat 🌱 plants🪴 . They don’t need to remind me of something else I don’t eat. They are good in and of themselves. I saw a post for this “harvest salad” and it was love 😍 at first sight.

This beauty has kale, romaine, parsley, roasted veggies (butternut squash, carrots, red onion, chickpeas, and bosc pears 🍐🤤). Oh I’m not done—pumpkin seeds, sunflower seeds. And pomegranate seeds that didn’t make it in because I was already at the brim of this platter bowl.

I picked up the ingredients on a walk during my lunch and couldn’t wait to get home to try it. Lunch was going to be 🔥 this week.

My coworkers indulged me looking at photos, taste testing, and my “guess what’s fir dinner tonight?” happy dance even though I’d had the same for lunch.

I haven’t even mentioned the dressing g that was made with butternut squash purée, vegan Mayo, maple syrup, and spices.

It was as much a joy to make this salad as it was to eat it. This was Monday. Ask me what I’m happily eating tonight 😂
